I was chatting via text with my best friends last night about what we were doing for dinner. I admitted I ate pop tarts (raspberry is the best!) for supper, and another friend was having red wine. My friend Amanda pipes up that she made homemade pizzas because she didn’t have time to really cook. I don’t know about you, but anytime the oven is turned on, that’s serious cooking. And making homemade anything is just a brush away from deserving a Food Network show, in my book.

I was inspired to step it up in the kitchen and thought I’d share the inside scoop on super easy homemade pizzas with Amanda and her family. Be sure to keep up with the Modern Day Donna Reed on twitter. She’s the best!

From Amanda’s Kitchen:

This is my quickie, go to meal when I’ve got a lot going on, but I don’t want to eat complete junk. Last night, my husband Ryan was craving pizza. We had a few cocktails and didn’t want to go out to eat. So I took a peek in my kitchen cupboards – reminds me of Anne of Green Gables – and grabbed a couple of ingredients I already had at home. I ended up with a delicious, romantic pie for my man, and it was made in a flash.

I started out with a whole wheat crust from Target. I basted it with garlic olive oil and topped it with cheese. I was out of mozzarella, which is very very rare for me. So, I used up some Mexican cheeses and spread it all over. Then I felt like embracing the whole Valentine’s Day thing and wrote “I Love You” in red bell peppers. I had my 5 year old help write it out to practice her spelling.  I popped it in the oven at 400° for about 12 minutes. And voilà!  Easy. Delicious. #A+inwifing  #A+inparenting #wifingismynewword
